Ahi Poke Now Available at Rubio’s

Whenever I need a quick, healthy lunch one of my favorite places to stop is Rubio’s. They have a wide variety of sustainable seafood and it’s all pretty darn tasty. Every time something new comes in I’m pretty excited – especially when it’s already a dish I know and love. Recently, I was lucky enough to sample the restaurant’s latest offering – the Ahi Poke Bowl.

Poke is all the rage now and it’s really no surprise. It’s healthy, convenient and super yummy and I was curious how Rubio’s version would stack up. In the dish a bed of citrus rice and romaine lettuce is topped with a creamy chipotle sauce, fresh avocado and edamame, tortilla strips and sashimi-grade ahi in a ginger soy sauce. To spice it up a bit you can also add Fresno chili peppers.  While not quite the poke bowl I would build myself I ended up really enjoying it. Every item is super fresh and it’s filled with flavor. I definitely wouldn’t mind having it again.

At the same time the poke bowl debuted, Rubio’s seasonal Langostino lobster burrito and taco plate returned to the menu. This year a new dish joined them – the Surf and Turf Burrito.

The hefty burrito contains the lobster, all natural steak, cheese, avocado, rice, salsa and chipotle sauce. Already a big fan of the Langostino lobster I thoroughly enjoyed the new burrito. Chock full of seafood and steak it’s a tasty, hearty meal.

Rubio’s continues to surprise me with it’s new, innovative dishes. I wonder what they’ll come up with next?

    LOVE Rubio’s. They’re so accommodating when I make a trillion changes to my taco plates!
