Rubio’s Introduces Wild Coho Salmon to Menu

As I grow older I love seafood more and more. When I was a kid I would only eat it if forced but now I gladly order it. But, like many consumers, I’m often concerned about its origins – I don’t want my enjoyment of the food to affect it’s overall sustainability. Luckily there are restaurants out there who agree. Take Rubio’s. They’ve recently replaced Atlantic Salmon with sustainable Wild Alaska Coho Salmon as part of their Made with a Mission commitment. Now, I like that. So when they invited me to stop by and try it out I gladly agreed.

To celebrate the introduction of the Wild Alaska Coho Salmon Rubio’s brought back the Chimichurri Salmon dishes. On my first visit I tried the two taco platter.

The tacos have generous chunks of salmon topped with chimichurri sauce, fire-roasted corn, creamy white sauce, Fresno Chiles and mixed greens. The tacos have a hint of spice and are generously portioned. The transition to wild salmon makes a big difference and the fish is full of flavor. Topped with the remaining ingredients it’s a tasty dish.

On my next visit I opted for the Chimichurri salmon burrito. In addition to the fish there is melted cheese, chimichurri sauce, fire-roasted corn, rice, black beans, salsa, Fresno chiles and creamy white sauce. Ok, now that I look at the picture I think I may have been given the wrong burrito.Looks like I got the Wild Alaska Coho Salmon Burrito. How funny that I didn’t realize it at the time. Probably because I really enjoyed this burrito. The guacamole combines well with the salmon and it’s a flavorful dish.

I’m glad Rubio’s has committed to more sustainable seafood. That mission combined with the tasty product will keep me coming back.
