The Fries Have It

For some reason, I haven’t been out and about much lately and don’t have any cool place to share with you. Hmmm, could that reason be lack of funds, high gas prices, and general laziness? Could be. But I don’t want to neglect you guys so I thought I’d bring back another installment of Cheap Ass Recipes. Remember those? It’s been awhile, right?

So, lately I’ve been trying my had at this whole Paleo thing. I’d been hearing about it right and left and figured I should give it a whirl. Now, full disclosure, I have no intention of going whole hog with it. I like my grains and my cheese and my sugar too much. Instead I’m just dipping my toes in – making Paleo dinners and being a lot more in tune to what I’m ramming down my craw. I have to say, it’s been working. I’m losing weight, gaining energy, and really starting to hate processed foods. Can’t ask for much more.

One book that has helped me with this whole process is The Food Lovers Make it Paleo cookbook. It’s chock full of delicious sounding recipes that also happen to be great for you. One that I’ve quickly learned to love is the Cajun Sweet Potato Fries. Or I should say I’ve learned to love my wimpy version of them. When I first made the recipe…whoo boy was it spicy! Too much for me so I’ve tweaked the amount of pepper and they’re just about perfect now. Here’s the scoop:

First, preheat the oven to 400 degrees. Then, take a sweet potato (NOT a yam. I tried both and the yam gets too mushy in the oven.) and slice it into wedges.

 Then, in a small bowl, combine 1 tsp each salt, garlic powder, onion powder, and paprika, 1/4 tsp black pepper, and 1/8 tsp cayenne pepper (told ya I was a wimp).
Drizzle 1 tbsp extra virgin olive oil over the potato wedges. Then sprinkle them with the spice mixture.
Toss until coated.
Spread on a cookie sheet and back for 30 minutes and voila!

Cajun sweet potato fries. Sooooo yummy! If I could eat these every day I would be very, very happy.
