Chef Bracken’s Southwest Chorizo Mac Now Available at Stacked
Confession time: I don’t really like mac n cheese. I know I know. How can I call myself an American? I can’t help it – I think it’s just too rich and I don’t like macaroni noodles. BUT, that doesn’t mean that I avoid it at all costs. I’m always happy to give it another try. Recently, I was invited to Stacked: Food Well Built to sample their newest menu item – Chef Bracken’s Southwest Chorizo Mac n Cheese – and I decided to give the dish another try.
Back in 2011, when Stacked was just about to open they enlisted Chef Bill Bracken to help develop several of their recipes. The award winning chef is responsible for some of the restaurant’s tastiest dishes and every year they continue to enlist his help when competing in the San Diego Mac n’ Cheese Fest. This year was no different and, thanks to Chef Bracken’s Southwest Chorizo Mac, the restaurant took home the People’s Choice Award.
When not helping Stacked create delicious pasta dishes Chef Bracken can be found at Bracken’s Kitchen – the non-profit he started to help feed the needy of Southern California. By rescuing quality, unused food from area commercial kitchens the organization has provided countless meals to the hungry of Orange County and beyond. It’s a wonderful cause that I’d be happy to support any day of the week and, this month, Stacked has made that quite easy. They’ve added the Southwest Chorizo Mac to their menu and for every dish sold they will donate $1 to Bracken’s Kitchen.
So, how is the Southwest Chorizo Mac? In one word: delicious. Really and truly delicious. I may not like mac n’ cheese in general but I love this dish. How could I not when it’s chock full of house made cheese sauce, chorizo, goat cheese, caramelize onions, tomatoes and mushrooms? It’s a hearty, comforting dish that’s perfect for this time of year.
The Southwest Mac will be available all month at all Stacked locations. AND if it proves to be popular it will be added to menu permanently along with the donation to Bracken’s Kitchen. So go to Stacked and order, order, order!
