Taking a Cooking Class with coursehorse

Once upon a time I was a culinary school student but as I finished up my courses I came to the realization that I didn’t want to become a chef. Despite that conclusion I still enjoy home cooking and love to take the occasional cooking class. Recently, I was contacted by coursehorse, an online site that centralizes over 50,000 local classes into one stop shopping, and offered a free class. I knew immediately what I would choose.

A cooking class, of course! I logged onto coursehorse and began to explore. There was so much to choose from…cheesemaking, cocktails, dessert…all available at my fingertips. Then, I found craft and dancing classes. Should I learn to sew? To dance the salsa? Hmmm….everything was so tempting.

I decided to stick with my original plan and take a cooking class. I discovered one of the locations available was Prep Kitchen Essentials in Seal Beach. I had shopped there before and had long been wanting to take one of their classes. Now was my chance and I quickly signed up. Before I knew it I was attending a class called Late Summer in Paris.

The class, taught by Chef Elizabeth Whitt, was four courses of delicious French food. There were 9 students including myself which made for an intimate hands on experience. We began with introductions and I learned our instructor had lived for over a decade in Paris. This was the real deal! Before I knew it we were starting and I was chopping away at fresh veggies.

On the menu were Tomato, Basil and Goat Cheese Tartines, Chicken Breasts with Prosciutto, Brie Cheese and White Wine Sauce, Herb Pasta with Leeks and Zucchini and Strawberry Napoleons. Since the class was a little over two hours long and everything was handmade (even the pasta!) we were busy the entire time and the kitchen was filled with the intoxicating scents of our creations.

Before I knew it we were sitting down to enjoy the fruits of our labor.

Mmmm…not since my class at Le Pain Quotidien had I has such a delicious tartine. And the pasta! It’s extra special when it’s handmade. And the chicken! I can’t resist anything that’s bursting with brie. After all the indulgence a light Napoleon was the perfect cap to the meal.

It was a wonderful evening and Chef Whitt was a fantastic teacher. As difficult as the dishes look she showed us just how easily they could be put together. My family and friends soon may be enjoying an Autumn in Paris menu.
